Burrito Bake

1 c Bisquick
1/4 c water
1 can (16 oz) refried beans
1/2 lb. ground beef, cooked
1 avacado, sliced (optional--I almost always leave this out because I don't have one)
1 c thick taco salsa (or 1/2 c salsa and 1- 8 oz. can of tomato sauce)
1 1/2 c shredded cheddar cheese

Grease 10" pie plate or 8 x 8 pan. Mix Bisquick, water and beans. Spread in pan. Layer remaining ingredients on bean mixture. Bake 30 minutes at 375 degrees.
If you are out of Bisquick (I always am) you can mix the following instead of the Bisquick and water:
1 c flour, 1 t. sugar, 2 t. baking powder, 2 T oil, 1/3 c. milk

The original recipe called for 1 lb. of ground beef but I like it with less meat. The 1/2 c salsa and 1 can of tomato sauce is also my modification as it fits the ingredients I have on hand. This makes great leftovers and should freeze well also.

Note on my recipes. I always abbreviate cup as c. Tablespoon as T. and teaspoon as t. Just in case I forget to make that clear!
